Fourtalia from Andros

Ingredients

  • 6-7 eggs
  • 2 country style pork sausages, sliced
  • 4 large potatoes, thinly sliced
  • 2 tablespoons of olive oil for the frying
  • 4 medium size pieces of boneless pork (or equal number of rashers of bacon) - optional
  • Salt
  • Pepper
  • Spearmint

Preparation

Slice the potatoes and fry in olive oil. Beat eggs in a bowl, add salt, pepper, freshly chopped spearmint and the slices sausage.
Add the mixture into the pan with the potatoes, after taking off the extra olive oil and fry on all sides. Omelette is served hot.
